I am so sorry I have been neglecting the site for so long! What has it been, a month? I believe so sadly. Well as a few of you know I had swine flu, it was horrible but luckily I didn’t die! Yay for that right? Well while being sick all I did was sleep and surf the web. Then I remembered what my grandmother telling me that Miso soup is one of the best foods for your body during flue season, ancient Japanese secret as she used to call it. So today I wanted to teach you all a really easy way to make this delicious food right in your own kitchen! This is the traditional miso with tofu. My personal favorite. I will also post later a recipe to make your own tofu from scratch.

Ingredients:
1 Wakame piece of about 5 cm
1 medium carrot, cut is small cubes
6 cups water
1 medium onion, diced
2 tablespoon miso, dissolved in 2 tablespoon water
2 tablespoon parsley, chopped

Method :
Soak the Wakame in a bit of water for 10 minutes. Remove the middle rib and cut in small pieces
Boil the water in a pan and add the onions, carrots and Wakame. Simmer for 5 minutes. Remove from heat and add dissolved miso. Serve the miso soup immediately. Decorate with the parsley.

Warning! Do not boil after adding the miso paste, it will cause it to lose its flavor.
